What do Ghirardelli cocoa, maple sugar and powdered ginger have in common? Why Popcorn, of course!

There are some days when I just want a snack for dinner…..so going to my cupboards, I rummage through spices and sweets and came up with something different….

I mix two tablespoons of Ghirardelli cocoa, 1 teaspoon and a dash of powdered ginger and 1 tablespoon of maple sugar together….and sprinkle it over hot popcorn!!!

The saltiness of the popcorn dusted with this mixture just makes my taste buds so happy!

Tomato Soup-Rice Broiled Green Pepper with Peppercorn-Cumin-Coriander Chicken

What to do with one cup of leftover tomato soup? Why, simply liquify yellow and green zucchini in half a cup of low sodium chicken broth, place one cup of that vegetable mix into the tomato soup, bring to a boil and place one cup of arborio rice, letting it cook for 15 to 20 minutes.  I found a green pepper in the fridge, filled it with this awesome mixture, sprinkled it with a about a tablespoon of parmesan cheese and placed it in the oven to finish cooking with the peppercorn, coriander with cumin broiled chicken!!!

Leftovers rock!

Starry, Starry Night…….no it’s Not a Song, it’s a Smoothie!

Someone left a bag of star fruit on the kitchen table at work….so during a coffee break, I took two, wondering…what in the world am I going to do with this funny fruit?

Out from the fridge came a cucumber, an orange and pineapple.  Peeled the cucumber, juiced the orange, chopped the pineapple and into a blender went all three with slices of one star fruit…and voila! It’s a Star Fruit-Cucumber-Pineapple with Fresh Orange Juice Smoothie!

So delicious and filling, it was my dinner……

Strawberry-Tomato Soup with Broiled Chicken infused with an Espresso-Kosher Salt Rub!

 

ImageRemember that awesome tomato soup I made on Friday afternoon?

For a special Sunday lunch, I took one pound of fresh, bright red strawberries and pureed them with 1/3 cup of the awesome tomato soup, and placed it to chill in the freezer.  I adorned it with some grape tomatoes, broccoli and three Awesome Garlic Parmesan Pretzel Crisps, made by Snack Factory.  These chips are totally awesome…and go so well with strawberry-tomato soup, which by the way could be enjoyed before, during or after lunch!  The light garlicky tomato soup, accentuated with the pureed strawberries made my taste buds feel like they were at a disco! So much flavor dancing all over my tongue….severe yum factor!

Had chicken in the fridge, so out it came…and unbeknownst to me, opening my cupboard I reached for the espresso….even though it did not seem to make any sense, I took kosher salt and therefore created my first espresso and kosher salt rub for chicken.  Let me tell you….the awesome perfume of espresso with chicken wafted throughout my kitchen, making me salivate, as I waited for it to cook.

Zucchini and broccoli, lightly tossed with a just a tablespoon of extra virgin olive oil, really good balsamic vinegar and kosher salt made a great side dish.

Early Saturday Breakfast: Strawberry & Muenster Cheese Mini Sandwiches!

Remember that yesterday I shared with you how my Tomato Soup Biscuits came about? Biscuit left-overs provoke me to think out of the box…..yesterday not only did I purchase those lovely vegetables to make the absolutely-aromatic-fill-your-tummy-with-goodness-tomato soup, I also found that they had the most extraordinary bright red, juicy strawberries!

Knowing that I had Muenster cheese waiting for me in the fridge, out came the strawberries, left-over tomato-soup biscuits, awesome cheese…..what better combination for a mini-sandwich breakfast, accompanied with freshly grated lemon-ginger-honeyed hot tea???

I like to keep a lemon and fresh ginger in the freezer as it makes it so easy to grate….so one lemon was grated as well as one healthy heaping spoonful of freshly grated ginger went into 2 cups of boiling water, with the fresh lemon juice of the grated lemon, and a friendly drop of honey made this beyond delish….a wonderful accompaniment to the light strawberry-Muenster cheese mini sandwiches for Breakfast!

Best comfort food for a chilly day in Miami? Why, Tomato Soup, of course!

ImageWoke up to 56 degrees……but in Miami, that feels like it’s a lot colder than it really is! I bundled up to go to work, in Boots, Sweater, Scarf and Coat.  Yes, it was That Cold to me.

On my way home, I passed an open field where they were selling fresh fruits and vegetables….so I stopped and walked right up to the stand where they had some gorgeous colorful vegetables. My grumbling stomach said…it’s time to make Tomato Soup!

I purchased some large tomatoes, a poblano and vidalia onions.  Couldn’t wait to get home in order to start creating a new style of tomato soup.

As soon as I walked into my kitchen, out came a large cookie sheet, where I spread out the tomatoes, poblano pepper and vidalia onions to broil them first. Into a stovetop pot went garlic, tomato paste, tomato sauce, dash of kosher salt, pepper, smoked paprika, and the juice of one lemon, as well as two cups of low sodium chicken broth.  As soon as I could smell the lovely aroma of the broiled tomatoes and the vidalia onions,  the tomatoes were peeled, and then were chopped up with the vidalia onions and the poblano pepper, and all went for a swim with the rest of the ingredients in the stovetop pot. After a good 20 minutes, small batches of the soup went into a blender, where it liquified the vegetables together….such an amazing aroma came from this light and superbly flavorful soup.

But there was something missing…..I always keep my biscuit mix nearby, so in went one cup of the tomato soup, as well as half a cup of parmesan cheese and 1/3 cup of chopped bacon.  In just 12 minutes at 400 degrees, the tomato soup biscuits were done!

Yum……now where did I put my soup spoon????

 

What’s the next best thing for breakfast-lunch-and-dinner? Why, Quiche, of course!

It was one of those afternoons when I wanted to use all the veggies left in my fridge…..so out came asparagus and mushrooms….found some cream and cheese and all of a sudden it made sense….these ingredients would make a fantabulous quiche!

Also found some bacon, so chopped all the veggies, mixed in some eggs, cream, cheese (parmesan, of course) and some Muenster and Voila! In less than an hour, I had two quiches which serve for breakfast, lunch and dinner!!!

YUM…..now let me go get my fork!

What can make you weep….and laugh at the same time? Why, it’s a Spicy Hot Red Pepper, Jalapeno, Habanero, Louisiana Hot Sauce Over Chocolate Corn Bread!

Quite a mouth full, right?  A run to Whole Foods at lunch time had me salivating over all the peppers they had available…..so I picked up some jalapenos, habaneros, red peppers, tomato sauce and added in some kitchen staples…. lemon, orange and a few drops of Louisiana hot sauce and pureed it together….and voila! Here it is!!

It will be served with chocolate….yes, chocolate corn bread!!! Stay tuned to future episodes of “Cooking with Gabi” to get these recipes….will definitely make your mouth Pop Full of Flavor!
