My friend’s 20th anniversary provoked me to go to dark chocolate to create a yummilicious cake….but since I had some leftover batter, I decided to put it to good use and make some cupcakes. This was the first time that I literally had to place the bowl under water immediately for fear that I would lick the bowl clean!
The ganache was to die for. Melting Lindt’s Orange Intense Chocolate with heavy whipping cream created a rich and flavorful smooth frosting that made me do the unthinkable…..I had two cupcakes! I pride myself on having restraint and always just having one to try them, but there was something so delicious about this rum, fresh orange zest and three chocolate cupcake that grabbed my taste buds by the throat! I am so thankful that I have an event that I am going to where I will be able to take the remaining cupcakes, as I can’t trust myself this time with these absolutely delicious baked goodies.
I was super excited that my neighborhood Publix had a sale, yes an actual sale, on Lindt chocolates….so I went back for more.
This is a sure hit!
It is so easy to grow jalapeños! I never thought I’d be growing veggies, but with an AeroGarden, all you have to do it just make sure it has enough water and special veggie plant food! It’s been fascinating watching them grow.
Seeing the jalapeños transition from a deep green to bright red called me to do what I called a “jalapeño tasting.”
Using the Bullet, a jalapeño was pulverized with 6 oz of tomato sauce, a dash of salt, and pepper, and voila! A semi-spicy tomato jalapeño sauce was created.
Then I chopped up a large onion with 4 tomatoes, red onion, salt, pepper, one green and one red jalapeño and about two tablespoons of fresh lime juice, to create my own kind of pico de gallo.
And last but not least, cheesy cheddar and parmesan biscuits made with fresh jalapeños and jalapeño salsa accompanied the tasting. Yes, you read that right……jalapeño sauce and fresh jalapeños as well as some pico de gallo went into the batter for the cheesy biscuits….and when these babies were done, taken right out of the oven….I admit….I had more than one. They were outstanding! I had brushed cream on top of the biscuits and then sprinkled parmesan cheese on top…and me, oh, my…..those were just amazing biscuits!
Now I’m waiting to receive some jalapeño recipes from some Mexican friends to try something new!
Hungry for something fast and yummy and thinking of chicken, I came across a super price for salmon at my local supermarket so off I went home to cook a fast and what would become a scrumptious meal. A dash of salt and pepper and I placed the salmon to cook stove top.
Searching in my fridge I found a jar of pesto from Whole Foods…..so I took a large tablespoon of pesto and covered the salmon with it, and took another tablespoon and placed it in a bowl with a tablespoon of rich balsamic vinegar and mixed it well….and took one tomato and chopped it up and placed it in a bowl with pesto, the rich and thick 18 year old balsamic vinegar that I received as a gift, with just a dash of salt and pepper……when the salmon was almost cooked, I took a couple of tablespoons of the marinated tomatoes and placed it on top, allowing it to cook the last few minutes.
It was just amazing…and superbly filling…and so yummy…and so healthy! Superbly aligned with eating healthy and incorporating veggies into each meal!
Starting off 2014 with a bang!
I took an entire bag of Lindt chocolates and melted them and infused the batter with this amazing chocolate and about one heaping tablespoon of fresh orange zest….it definitely made these cupcakes over-the-top!!!
Orange zest was also included in the cream cheese chocolate frosting…..absolutely delicious!
