Pesto’d Salmon Broiled with Tomatoes!

3-1-2014 019

Yes, I took that fresh aromatic live green pesto and created a layer over a good portion of salmon and then covered it with fresh tomatoes and into the oven for a good 15 minutes….and when it was done, it was amazing…..the freshness of the pesto with the salmon and the tomatoes just made me happy!

Super Fast Pesto & Balsamic Vinegar Tomatoes with Salmon!

Image

Hungry for something fast and yummy and thinking of chicken, I came across a super price for salmon at my local supermarket so off I went home to cook a fast and what would become a scrumptious meal.  A dash of salt and pepper and I placed the salmon to cook stove top.

Searching in my fridge I found a jar of pesto from Whole Foods…..so I took a large tablespoon of pesto and covered the salmon with it, and took another tablespoon and placed it in a bowl with a tablespoon of rich balsamic vinegar and mixed it well….and took one tomato and chopped it up and placed it in a bowl with pesto, the rich and thick 18 year old balsamic vinegar that I received as a gift, with just a dash of salt and pepper……when the salmon was almost cooked, I took a couple of tablespoons of the marinated tomatoes and placed it on top, allowing it to cook the last few minutes.

It was just amazing…and superbly filling…and so yummy…and so healthy! Superbly aligned with eating healthy and incorporating veggies into each meal!

Starting off 2014 with a bang!

Pesto’d Salmon with Zucchini-Onion & Carrot mix, with Marinated Olives!

Image

Who would have thought that I would find awesome fresh salmon at Publix Supermarket for only $5?!!! I ran home and made my own mix with pesto, sundried tomatoes, and a tablespoon of extra virgin olive oil and poured that over the salmon. Using a mandoline, sliced zucchini and onions, and included carrots with black and green marinated olives to cook for approximately 8 to 10 minutes.

The aroma from this dish made me quickly plate it, as I just wanted to dive in! The salmon melted in my mouth, and the mix of vegetables with olives ramped up the flavors, making it one of my new best dishes.

Check out the plate! “Blessed are those who trust in the Lord, and have made the Lord their hope and confidence.” Jeremiah 17:7. Coventry makes these lovely dishes with beautiful reminders from God’s Word.

“They are like trees planted along a riverbank, with roots that reach deep into the water. Such trees are not bothered by the heat or worried by long months of drought. Their leaves stay green, and they never stop producing fruit.” Jeremiah 17:8

I love the reminder that regardless of the circumstances of life, that if we put our trust in the Lord, He will sustain us with hope and confidence for the future.

Have a blessed day!
