Scrambled eggs with broccoli – Green Saturday morning delight!

What comes together in a blink of an eye for a quick Saturday breakfast? Scrambled eggs, of course! As I’m working hard at leaving carbs out of the equation, I reached for the broccoli staring at me when I opened the refrigerator door. Come with me, and chop, chop, it was ready to be included in the pan with the eggs.

Since the beginning of this year, I have not eaten bread, biscuits, or toast! This has truly been quite an experience, and frankly, one that I never thought I would be able to sustain for a very long time.  I come from a carb-happy family, in which bread, biscuits toast and/or crackers are incorporated into each meal….each meal! My Aunt Neni, who I adore, doesn’t understand how I can have a meal and not finish it off with a piece of bread – yes, you read that right….that’s her “after dessert” treat!

I chose this green path for my health and I am happy, thrilled, shocked that I was able to lose 10 lbs within the first couple of weeks – totally unheard of as that had never ever happened before.  Yes, I jump started a cleaner way of eating using Dr. Gundry’s The Plant Paradox.  I am so grateful for this book – the recipes are super easy and delicious, and as I love to cook, I’ve tweaked some of them according to my personal taste.

But back to the eggs…what did I put in them?

A small handful of shredded Gruyere

2 chopped chicken and apple sausage breakfast links, Applegate Naturals – found them at Whole Foods and had to try them, and

a dash of freshly ground pepper, and that’s it! No added salt of any kind due to the sodium in the breakfast links, and after the eggs were almost done, the chopped broccoli went into the pan, and Voila! A delicious breakfast without bread.

Yes, you read that right! Broccoli for breakfast….and let me tell you….quite delicious!

First I cooked the bacon and after it was well done, placed in the broccoli to cook, while whisking two eggs with just a dash of kosher salt and a third of a cup of shredded white cheddar cheese.  There was something quite decadent about cooking the broccoli with the eggs and bacon….after it was well done, it went on top of toast, to become an open faced breakfast sandwich…..the crunch of the bacon with the eggs and broccoli was amazing…..

And to finish it off, one sliced nectarine with kiwi, a healthy dollop of Greek yogurt and just 3 tablespoons of granola……this was my Saturday Brunch!7-27-2013 227

 

The cup of Nespresso coffee just made it so amazing……every day should be a Brunch Day!

 

 

Bacon goodness in Scrambled Eggs and an Everything-in-the-fridge Biscuit!

ImageI love making my own biscuits and this past weekend, I wanted a homemade brunch. Finding out that now I have become lactose intolerant, I now have to figure out ways to replace milk with other products…..and the first one that I am trying out is almond milk.  I am glad to say that so far, so good! I have not had any negative reactions. Had a cup of Nespresso coffee with the almond milk and it Worked!! Hallelujah! Happy Camper on that note!

I have an upcoming dinner that I am creating for a friend that requested “everything bacon!” So I decided to try out different things, beginning with biscuits.  Looked in the fridge and put everything and then some in these lovelies.

Not only did I use parmesan cheese but I also shredded about half a cup of sharp cheddar. Also sea salt and pepper went into the flour mixture, along with finely chopped bacon and ham, of course!! Talk about savory, savory deliciousness…and yes, I did use some of the almond milk in the biscuits.  I took some to a couple of people for them to try out and they all said the same thing…..”Delicious!”

So since I am in the midst of creating the menu for this upcoming “bacony-goodness” birthday dinner, I am open for suggestions for the appetizers. I was all excited about bacon wrapped figs or dates, but I was told no way by the birthday boy……so now I am seeking suggestions…..and will continue to surf to find some yummy bacon goodness for savory appetizers.
